Kefir, how many of you enjoy this tart fermented drink. I find that adding it to smoothies is the easiest way for me to enjoy it. This drink is very refreshing and I love it.

Kefir can be made from any type of milk, cow, goat, etc. Milk kefir is not only easy to make,this delicious, probiotic-rich, versatile beverage will benefit your entire family. Kefir grains look like small cauliflower florets. These grains are added to milk and allowed to culture for a number of hours. The grains are then removed by using a strainer. The strained kefir is allowed to ferment again for a few hours.
Lemon Ginger Kefir Smoothie, THM S or FP, SG, GF
- 1/2 cup double-fermented kefir
- 1/2 cup cottage cheese*
- 1/4 cup lemon juice
- 1/2 teaspoon turmeric powder or 1 teaspoon juice
- 1 tablespoon ginger juice
- 2 tablespoons THM Gentle Sweet
- pinch of mineral salt
- 4-6 ice cubes
Combine all ingredients in a blender cup. Blend until smooth and creamy. Serves 1. *full fat cottage cheese for S or fat free for FP
I make ginger juice by blending 1 cup ginger chunks with 1 cup water. Strain through a cheesecloth to remove the pulp. Discard the pulp and reserve the juice to use in drinks.
Turmeric Juice is so good in drinks. I buy a small bottle of juice and it lasts a long time. You can make your own from turmeric roots but beware–it does stain everything it gets in contact with.
I love the cups with my Ninja Blender System for making smoothies. The cups do a wonderful job with blending okra, also.
