Herb Roasted Vegetables THM S, Keto

Have you ever walked through your garden and came in with a basket of veggies and herbs? I love to make Herb Roasted Veggies to compliment a meal. Since we needed to plant later in the northern part of Pennsylvania where we now live my garden isn’t producing yet other than herbs. I served these Roasted Veggies with Blue-cheese Stuffed Hamburgers for our evening meal. My stoneware large bar pan is my favorite for roasting. I did add 2 sweet potatoes to the veggies for my husband and children. This meal is easy to make for a family and picky eaters can pick and choose which veggies they want to eat. You can use any mixture of veggies but to keep it in an S do not use any veggies with carbs such as sweet potatoes, carrots, regular potatoes.

The Perfect Cheesecake THM-S, Keto Friendly

Cheesecakes have always been a favorite dessert of mine to make for special occasion. They are one of the easiest dessert to make sugar-free and low-carb and they taste just like the sugar-laden ones do. When I take a cheesecake to carry-in dinners I always come home with an empty plate. Separating the eggs and whipping the egg whites stiff give a wonderful light texture. You can also bake this cheesecake in a 9 x 13 pan if your prefer is you do not have a springform pan. Sometimes I omit the sour cream topping and just serve it with whipped cream and fresh berries.

Coconut Bundt Cake THM-S, Keto, SF, GF

Coconut cake has been family favorite for many years. I found this cute little 3 cup bundt pan in a houseware store a few weeks ago. Air-fried Cajun Chicken Wings with Spicy Cajun Sauce THM-S

Wings are a favorite food to get at pizza-style restaurants but so often they are covered in a sugary sauce. These Cajun Chicken Wings are juicy and crispy after being fried using Air-Fry Crisping in the Ninja® Foodi™ Pressure Cooker. The Air-Fry Crisping gives wonderful results without all the fat of deep frying. I loved the simplicity of the Ninja Foodie as it so easy to use and the wings were a golden brown in a short time. Served with Spicy Cajun Sauce these wings have become a favorite in our house. Pair these with a large garden salad for a wonderful meal.

Sour Cream Raspberry Pie THM-S

One way to celebrate summer is with a Sour Cream Raspberry Pie. For years I have had a Black Raspberry patch at the edge of my garden. They are my all time favorite berry. I do have red raspberries, strawberries, and blueberries plants but I love to walk through my black raspberry patch picking the plump juicy fruit the best. My children always hated the spring time when mom said it was time to trim raspberries. Leather gloves and long sleeves shirts were a must. Some summers my patch yielded over 130 pints but I have scaled it down to a more manageable size much to my children’s relief.

Seafood Pasta Salad THM-S

Pasta Salads are always delightful at picnics and carry in dinners. Our family loves any type of salad and seafood, so why not combine the two! Most Seafood Pasta Salads use imitation crab meat but I have chosen to use canned shrimp and crab meat because of all the additives in imitation crab. This salad also reminds me of warm sun, sandy beaches, and ocean waves.
