Did you know you can make chewy granola bars at home? These granola bars are sugar-free, chewy, and so good! They can also be drizzled with melted chocolate or dipped into chocolate. Either way they make a wonderful snack bar.

Crispy brown rice and oats are included in these bars. There is 4.5 grams of carbohydrates per bar. That is still below the limit for carbs in an S snack. You would want to limit any other carbs with your snack.
If you would like to reduce the carbs, reduce the oats to 1/3 cup and replace the remaining 1/3 cup with unsweetened coconut. That would reduce the carb amount to just a little over 3 grams per bars. You also can used different kind of nuts and chocolate chips as you prefer.

As you can see, the bottom of these bars have a layer of chocolate. Remove the formed bars from the snack maker. Set aside. Spoon one tablespoon melted chocolate into each snack well. Press formed bars into the melted chocolate. Allow chocolate to harden before removing bars.
Granola Bars, THM S
- 1 3.4-ounce package Max Mallows
- 2 tablespoons coconut oil
- 2 tablespoons sugar-free peanut butter
- 3/4 cup brown rice crisps
- 2/3 cup oats, coarsely ground
- 1/4 cup Lily’s chocolates chips
- 2 tablespoons chopped nuts, walnuts, peanuts, ect
- 1 1/2 teaspoons chia seeds
- Pampered Chef Snack Bar Maker
- PAM Olive Oil Spray
- Additional chocolate chips if you want to drizzle the bars or dip them in chocolate
- In a heat-proof bowl, add mallows, coconut oil, and peanut butter. Melt in the microwave for 45 seconds. Stir until smooth. Add remaining ingredients, stirring until well combined. Lightly spray a Pampered Chef Snack Bar Maker with PAM Olive Oil Spray. Divide mixture into 11 bars. Press the mixture into each form. I use a plastic wrapped 2 x 4 piece I found in my husband’s shop. Refrigerate until set.
