Air Fried Potato Wedges, THM E, DF, SF

Potatoes have been a staple in many countries for years. Did you know there are over 200 varieties of potatoes sold throughout the United States? The potatoes featured in this recipe are Yukon Golds. These potatoes have a lovely yellow color and a buttery flavor. Air Fried Potatoes Wedges are so good it is hard to stop with just a few. The outside layer is a bit crisp and the inside melt-in-your-mouth tender!

Of the 200 varieties of potatoes these all fall into one of seven categories…..russet, red, white, yellow, blue/purple, fingerling and petite. The potatoes with the lowest glycemic index are the reds, yellows, and purple. Potatoes have always found a place in my garden since my husband and sons love them. For years we have planted Norland Reds and Yukon Golds.

Eating potatoes with the skins adds Vitamin C and fiber which helps to keep the glycemic index lower. Waxy potatoes are much better for you than the russet starchy ones.

There is a brand new low glyecemic potato on the market this year. Huckleberry Gold that produces round to oval potatoes with purple skin and yellow flesh. Of course, I needed to order some for my garden just to see what they are like. I can’t wait to plant them and see how they yield!

I love my Ninja Foodie Air Fryer. I can use it to pressure cook or fry food. It works just wonderful! These potato wedges were just wonderful with crispy exterior and a soft interior.

Air Fried Potato Wedges, THM E, DF, SF

  • 2.5 pounds yellow potatoes, I use Yukon Golds
  • 1 egg white
  • 2 tablespoons water
  • Seasoning:
  • 3 tablespoon THM Nutritional Yeast
  • 2 tablespoons THM Oat Fiber
  • 1 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dill weed
  • 3/4 teaspoon Mineral salt
  • 1/4 Teaspoon black pepper
  • Wash and cut the potatoes into wedges. Beat egg whites and water together until frothy. Pour the beaten egg whites over the potato wedges. Mix the seasonings together. Sprinkle over the potatoes. Toss to coat. Turn Ninja Air Fryer on 390 degrees F. Place a layer of wedges in the air fryer. Close the lid and set the timer for 16 minutes. Stir the potatoes once while they are frying. I needed to do 2 batches of wedges in my fryer. Serves 6
  • Air fryers may vary so you may want to check the wedges after 10 minutes. 16 minutes was perfect on my Ninja Foodie.

Yukon Gold Potatoes have a very golden color. The texture is soft and just perfect to make these wedges.

These wedges have the egg white wash on them already. I will sprinkle the seasonings over them and toss to coat. This is the easiest way I have found to coat a bowl full of potatoes. As you can see the interior of the potatoes aer a buttery yellow.

This is the plate I served my family……Challah Bread, Sausage, salad with Ranch Dressing, and these potatoes wedges. These wedge were a hit with my hubby and adult sons. This meal was an XO—-crossover because it have both fats from the sausage and salad dressing and crabs from the potatoes and bread. The potatoes by themselves are an E.

Ingredients

  1. Question. I’m confused. At top of post it says the potatoes are an E fuel, but when you get down to the recipe it says it’s a crossover. Could you please tell me which one it is please? Thank you.
