Buffalo Wing Meatball Appetizers, THM S, Keto, Gluten-free, Sugar-free,, Low-carb

I love Buffalo Wing Sauce/cheese and these appetizer meatballs have a double dose of it. Hidden in these meatballs is Buffalo Wing Cheese for a spicy pop. The sauce combines Buffalo Wing Sauce, Ketchup, and butter. So if you love spice these are just for you!

Since my freezer is full of venison I used it to make the meatballs. You can use beef or even ground chicken or even a combination of meats.

Buffalo Wing Meatball Appetizers, THM S, Keto, Gluten-free, Sugar-free, Low-carb

  • 1 pounds ground beef, venison, or ground chicken
  • 1/4 cup Old Fashioned Oats, coarsely ground
  • 1 tablespoon THM Oat fiber
  • 1/3 cup almond milk or water
  • 1 egg
  • 1/3 teaspoon Garlic Powder
  • 3/4 teaspoon salt
  • 1/4 teaspoon Black Pepper
  • 1/2 teaspoon chili powder
  • 2 tablespoons finely diced onion
  • 4 ounces Buffalo Wing Flavored Cheese
  • Sauce:
  • 1/4 cup Ketchup, sugar free
  • 1/4 cup Frank’s Buffalo Wing Sauce
  • 2 tablespoons butter, melted
  • Combine ground beef, oatmeal, oat fiber, milk, egg, onions and spices until well mixed. With a medium Cookie Scoop , fill the scoop with the meatball mixture. Stick a small square of cheese in the center of the meatball. Release the meatball into your hand. Shape the meat mixture around the cheese. Place in a baking pan. Bake at 350 degrees F. for 30 minutes. Blend sauce ingredients together. Pour over meatballs. Bake for 10 minutes. Serve with toothpicks. Makes 18 meatballs.

Cookie scoops are favorite of mine. You can use them for all kinds of things in the kitchen, from cookies, meatballs, cupcakes, etc. I have 3 different sizes and they are used almost everyday.

These meatballs have a small square of Buffalo Wing Cheese in the center. When you bake the meatballs a bit of cheese may cook out but it should be very little.

Ingredients
