I have always loved cheesecakes and have found they are one of the easiest desserts to make sugar and gluten free. This one combines the best of two worlds, lemon meringue pie and cheesecake and has become a favorite.

Our family loves salads and this one is the tops! This Cobb Salad also gives a wonderful presentation at potlucks and picnics. Some of our children are not crazy of bleu cheese so I keep it to one side for those of us who do!

What is better than a fudgy chocolate cookie? A giant fudgy chocolate cookie studded with chocolate chips and whipped cream that’s large enough to share with friends! This cookie is baked in a cast iron skillet and has crisp edges and a fudgy center. What could be better than that! Add a pot of hot coffee or tea and you are all set for a special time with your friends!

Coffee is a favorite drink of mine as you probably can tell by now! This Mint Chocolate Iced Latte is delicious and so refreshing! You can’t go wrong paring these flavors together. The Latte in itself in is a FP but if you garnish it with whipped cream as pictured it is an S. I will often drink it without whipped cream but it is special to serve to guests with garnishes and my daughters think it need whipped cream, too!

Crisp, juicy apples in shades of green, yellow, and red are being picked in orchards these late summer days. Their flavors vary from tart to honey sweet. In our area freshly picked apples begin to appear at produce markets in late July and continue being picked until late October. Fried apples are so easy to make and the Brown Sugar Sweetener caramelizes on them for a melt-in-your-mouth goodness. I was gifted Granny Smith Apples and the combination of tart/caramelized is so appealing.

Scones are a favorite of mine to have with a cup of coffee or tea. These moist Pumpkins Scones have become my new “favorite”. They are moist and flaky. Even some of my picky eaters loved them. So that is a win win for me!!

Strawberries are one of my favorite berries. I think my family agrees with me because if I don’t hide them–I don’t get any! I always loved to bake Angel Food Cakes and this recipe was the first cake I made sugar and gluten free. This cake makes an impressive dessert when you add fresh berries and cream cheese filling. It would be embarrassing to tell you how quickly this platter was emptied at my house. My family loves it!!

Have you ever heard of a Bumbleberry? While there is not an actual fruit call Bumbleberry; this name is given to a mixture of fruit baked in a cobbler or pie. This mixed fruit cobbler features apples, rhubarb , blueberries, and strawberries. A biscuit style crust tops the fruit. This delicious cobbler serves 1 person for a main dish or 2 as a dessert.

If you are like me–you wish peach season would last longer. This fluffy cheesecake features peaches. Even better yet, it is a no-bake dessert so you don’t have to turn your oven on. The walnuts in the crust add a delightful crunch and pair with the smoothness of the filling. There are so many peaches varieties to pick from but my favorites for fresh eating are Red Haven, Sun High, and Contender.
