A favorite recipe to can for years was Seven Day Sweet Pickles. This recipe can be found in old cookbooks from our grandmother’s time. The original recipe took quite a lot of sugar but you can have the same crunchy sweet pickle using Stevia.

Fried Apples THM-E, Sugar-free, and Dairy-free option

Crisp, juicy apples in shades of green, yellow, and red are being picked in orchards these late summer days. Their flavors vary from tart to honey sweet. In our area freshly picked apples begin to appear at produce markets in late July and continue being picked until late October.  Fried apples are so easy to make and the Brown Sugar Sweetener caramelizes on them for a melt-in-your-mouth goodness. I was gifted Granny Smith Apples and the combination of tart/caramelized is so appealing.

Strawberry Angel Food Cake, THM-S, Keto, Sugar and Gluten Free

Strawberries are one of my favorite berries. I think my family agrees with me because if I don’t hide them–I don’t get any! I always loved to bake Angel Food Cakes and this recipe was the first cake I made sugar and gluten free. This cake makes an impressive dessert when you add fresh berries and cream cheese filling. It would be embarrassing to tell you how quickly this platter was emptied at my house. My family loves it!!

If you are like me–you wish peach season would last longer. This fluffy cheesecake features peaches. Even better yet, it is a no-bake dessert so you don’t have to turn your oven on. The walnuts in the crust add a delightful crunch and pair with the smoothness of the filling. There are so many peaches varieties to pick from but my favorites for fresh eating are Red Haven, Sun High, and Contender.

Pumpkin Chocolate Chip Bundt Cake, THM S

Cool nights and blooming goldenrod tell us that fall is rapidly approaching. The pumpkin vines are hanging full and ready for harvest. I love pumpkin cake and this one is a winner with Bake Believe Dark Chocolate Chips. This cake didn’t last long at our house and I a sure it won’t at your either. You may wonder why I have chosen to add peanut flour to this cake! I find that peanut flour helps the texture of low-carb cakes making the more like the sugar/flour laden ones.

Bread and Butter Pickles THM FP, Sugar-free, Low-carb

Pickling cucumbers always find an honored place in my garden. These cucumbers are different than the cukes you buy in the stores. Pickling cucumbers are especially bred for pickling–just like their name says. They are short and blocky, medium yellow/green in color, and have black spines. They make the BEST pickles. I love to can all different kinds of pickles and my family loves them.
