Strawberry Lime Boost Smoothie THM-FP

Smoothie are a refreshing summer treat. This one combines Strawberries and limes with THM Baobab powder  and  THM Whey Protein Powder for an energizing smoothie. I will use this as a meal replacement when I am busy or need to be on the road for a number of hours. My children love smoothies and for convenience the dry ingredients can be  measured into small jars or plastic containers. All you need to do is blend strawberries, lime juice, almond milk, and a container of dry ingredients and you are all set to go.

Cold-Brewed Coffee — THM S or FP

Hot humid summer days are here and there’s nothing more refreshing than a cup or two of Iced Cold-Brewed Coffee. I keep cold-brewed coffee concentrate in my fridge all summer long for a quick drink. It tastes so much better when made with freshly ground coffee beans given to you from Nicaragua and Nepal.

Cold-brewed Iced Coffee

  • 4 cups freshly ground coffee
  • 1/3 cup vanilla
  • Cold water to fill gallon jar

Combine coffee grounds and vanilla in a gallon glass jar. Fill with cold water. Allow the coffee to brew/steep at room temperature for 12-24 hours. Strain through a muslin cloth. Discard grounds. Refrigerate concentrate.  To make iced coffee use 1 part concentrate, 1 part nut milk, 1 part ice, and sweetener of your choice.

This can also be brewed in a French Press using 1/2 of the recipe.

THM-S  1/2 cup coffee concentrate, 1/4 cup nut milk, 1/4 cup cream, 6-8 ice cubes, sweetener of you choice.

THM-FP 1/2 cup coffee concentrate, 1/2 cup nut milk, 6-8 ice cubes, 1 tablespoon THM collagen

I will freeze ice cube trays of concentrate to use to make frappes.

I will at times add 1 scoop THM Whey Protein powder to us this as a meal replacement when I am out for the day.

You can also blend the ice, coffee, cream/milk, sweetener together for a frappe. I made 10 gallons of concentrate to serve at our daughter’s wedding.

Cold-Brewed Coffee

Ingredients

  • 4 cups freshly ground coffee
  • 1/3 ` cup vanilla
  • cold water to fill gallon jar
  • 1 glass gallon jar

Recipe Notes

Allow the coffee to brew at room temperature for 12-24 hours. Strain and discard the grounds. Refrigerate. To make iced coffee use 1 part concentrate, 1 part nut milk, 1 part ice, and sweetener of your choice. 

THM-S  -- 1/2 cup coffee concentrate, 1/4 cup nut milk, 1/4 cup cream, 6-8 ice cubes, sweetener of you choice.

THM-FP -- 1/2 cup coffee concentrate, 1/2 cup nut milk, 6-8 ice cubes, 1 tablespoon THM collagen

I will at times add 1 scope THM Whey Protein Powder to use as a meal replacement to take along when I need to go away.

Do you ever need more protein with a THM E or FP meal to keep you from getting hungry so soon? I, especially, need added protein with an oatmeal breakfast. Combine ingredients in a bowl. With a hand blender blend until smooth and creamy. Refrigerate until ready to serve. Serve 3-4. This is a favorite to eat with oatmeal for an E breakfast.

*Full fat Cottage Cheese and Greek Yogurt can be used for an S option.

Root-beer Float Finger Jello – THM FP or S

If you love the taste of Root-beer Floats you’ll love this finger jello. Best of all it is sugar-free, gluten free, and can be dairy-free as a THM FP. There is also an option for THM S with cream. Rootbeer Float Finger Jello

Root beer part:

White Part:

  • 1 cup cream for THM S OR 1 cup almond milk for THM FP
  • 2 1/2 tablespoons unflavored gelatin
  • 1 teaspoon vanilla
  • 2 tablespoon THM Gentle Sweet

Root beer part: Soften gelatin in 1 cup water for 5 minutes.  Bring remaining water to a boil, remove from heat and whisk in soften gelatin. Stir until it is all dissolved. Add extract and sweetener. Pour into a 9-inch square pan. Chill until set. White part: Soften gelatin in 1/2 cup cream (THM S) OR almond milk (THM FP) for 5 minutes. Heat remaining almond milk (THM FP) OR cream (THM S)until almost a boil. Whisk in gelatin until dissolved. Add vanilla and Gentle Sweet. Pour over root beer mixture and chill. Cut into 20 pieces.

*some extracts are stronger, you may want to add less and taste before adding the entire amount.

Using all cream will be a THM S. Using all almond milk will be a THM FP. I will sometimes use 1/2 cup cream and 1/2 cup almond milk to still have a creamy taste but with a reduced calorie load. You can still eat 3 pieces and be under 5 grams of fat.

Root Beer Float Finger Jello

THM-FP or S

Servings 20

Ingredients

Root Beer Part:

  • 2 cups water
  • 5 tablespoons unflavored gelatin
  • 1/4 cup THM Gentle Sweet
  • 1-2 teaspoons root beer extract
  • brown food coloring, optional

White Part:

  • 1 cup cream for S or almond milk for FP
  • 2 1/2 tablespoons unflavored gelatin
  • 1 teaspoon vanilla
  • 2 tablespoons THM Gentle Sweet

Instructions

Chipotle Sandwich Sauce – THM FP

My family loves sandwiches on hot, humid, summer days. Most bread options are an E and I wanted a tasty sauce that is low in fat so it can be add to a sandwich without having a crossover. A family favorite is Sourdough Flat-breads filled with various kinds of meat. Pictured below is grilled chicken tenders on Sourdough Flatbread with Chipotle Sandwich Sauce and extra Chipotle hot sauce simply because I like the added heat. This sandwich is an E because of the Sourdough Flatbread and sauce can be used in an S or FP setting.

Chipotle Sandwich Sauce

  • 1/3 cup Duke Mayonaise
  • 2/3 cup Fat-free Greek Yogurt
  • 2 tablespoons ketchup, sugar free

Ingredients

Strawberry Frozen Yogurt and Strawberry Sorbet THM-FP

Warm summer weather calls for cold, creamy ice cream. Here are two recipes for frozen yogurt and sorbet that are delicious for the hot muggy days. Best of all, they are THM FP.

Strawberry Frozen Yogurt

  • 3 cups sliced strawberries

Blend ingredients together until smooth. Freeze in a 1.5 quart tabletop ice cream freezer following manufactures instructions. Serves 6-8. I freeze the remaining frozen yogurt in individual containers. 30-45 minutes before I want to serve it, I remove it from the freezer and place it in the fridge. It softens slightly and is so handy.

Strawberry Sorbet

  • 1/3-1/2 cup THM Gentle Sweet or  Pyure Stevia Blend
  • 1 teaspoon vanilla

In a blender combine strawberries, milk, sweet mix, and vanilla. Blend until smooth. Freeze in a 1.5 quart tabletop ice cream freezer following manufactures instructions. 6-8 servings.

  • 3 cups fat-free Greek Yogurt
  • 1/3 cup THM Gentle Sweet
  • 1 teaspoon vanilla

  1. Blend ingredients together until smooth. Freeze in a 1.5 quart tabletop ice cream freezer following manufactures instructions. Serves 6-8.

  2. You can use full fat Greek Yogurt for an S Dessert

Hot Pepper Jelly, THM FP, Keto, Sugar-free, Low-carb

Our family enjoys spicy foods and have always enjoyed Hot Pepper Jelly as an appetizer on crackers. Here is a sugar-free version that we enjoy with cream cheese and Wasa Crackers.

Hot Pepper Jelly

Hot Pepper Jelly, THM FP, Keto, Sugar-free, Low-carb

  • 4½ cups red and green bell peppers, finely chopped
  • 2 ¼ cups apple cider vinegar
  • 12 jalapenos, removing seeds and membranes if desired
  • 4 teaspoons calcium water*
  • 1 ¾ cup  THMGentle Sweet
  • 4 teaspoon Pomona’s Pectin
  • Wash the peppers and chop off the ends. Remove the seeds and membranes. Finely chop peppers in a food processor. Drain the peppers for 5 minutes. Mix pectin and sweeteners and set aside. Place the peppers and vinegar in a kettle. Bring to a boil. Add calcium water and stir well. Whisk in the pectin/sugar mixture. Bring to a rolling boil for 2 minutes. Ladle into 8 ounce jars. Wipe jars clean and add lids and rings. Place jars in a prepared canner of hot, almost boiling water. Bring to a gentle boil for 10 minutes Remove from canner and allow to cool.
  • *there is a small packet of calcium along in the Pomona’s Pectin pack to make calcium water.

Angel Food Berry Dessert—THM FP

Strawberry Angel Food Dessert FP 25

Angel Food Cake:

  • 3/4 cup egg whites, room temperature
  • 1 tablespoon Sweet Mix or Gentle Sweet
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon cream of tartar
  • 3 tablespoons THM oat fiber
  • 3 tablespoons whey protein isolate powder
  • 2 tablespoons Sweet Mix or Gentle Sweet

Filling:

  • 1/2 cup cottage cheese, fat-free
  • 1/2 cup plain Greek yogurt, fat free
  • 2 tablespoons Sweet Mix or Gentle Sweet
  • 1/2 teaspoon vanilla
  • 4 drops Loran Cheesecake Flavoring
  • 1/4 teaspoon xanthan gum

Glaze:

  • 3 strawberries
  • 1-2 teaspoons Sweet Mix or Gentle Sweet
  • 1/8 teaspoon xanthan gum
  • Fresh Berries

Whip egg whites until frothy. Add sweet mix, vanilla, and cream of tartar. Whip until soft peaks for. Combine oat fiber, whey protein, and sweet mix together. Fold into egg whites. Line a 10 inch round baking pan with parchment paper. Spread batter evenly in pan. Bake at 350 degrees F. for 12-14* minutes or until lightly browned. Cool completely. Blend cottage cheese, yogurt, Sweet Mix, vanilla, cheesecake flavoring, and xanthan gum together until smooth. Spread over cake. For glaze, blend strawberries, Sweet mix, and xanthan gum together until smooth. Set aside Clean strawberries. Arrange berries over cake. Drizzle with glaze. Serves 8-10. This is a FP/Neutral by THM guidelines.
