Potato Salad — THM XO

Potato Salad, a potluck staple and comfort food is still an old time favorite. This recipe use small yellow or red waxy potatoes which gives this salad the perfect texture and flavor. This type of potato can be used in recipes without peeling. That in itself is a winner!

One of my favorite kitchen tools is a chopper similar to the Vidalia Chop Wizard. In a few minute you can have the potatoes chopped with this handy kitchen tool.

Potato Salad — THM XO

  • 8 cups diced small yellow or red potatoes, uncooked and unpeeled*** see note below
  • 3 tablespoons vinegar or dill pickle juice is even better
  • 2 cups mayonnaise
  • 1 cup sour cream, I use light
  • 1/3 cup prepared mustard
  • 1/2 cup pickle relish , finely chopped dill pickles
  • 3 tablespoon THM Gentle Sweet
  • 1 teaspoon garlic powder
  • 2 teaspoons salt, divided
  • 1/2 teaspoon black pepper
  • 2 cups finely chopped celery
  • 1/4 cup finely chopped onion
  • 6 hard boiled eggs, chopped
  • Chop potatoes into 1/2 inch pieces. I use a Vidalia Chop Wizard. In a 4 quart kettle boil potatoes with 1 teaspoon salt until fork tender. Drain and allow potatoes to cool. Sprinkle the vinegar over the potatoes. Toss. Combine together mayonnaise, sour cream, pickle relish, Gentle Sweet, garlic powder, seasoning packet from potatoes, remaining salt, and pepper. Toss together potatoes, dressing, celery, onion, and eggs. Allow salad to chill for 6 hours or longer to combine flavors. 2/3 cup serving — approximately 16 per recipe

NOTE***I used these little packs of potatoes that I bought to make the salad. These potatoes are washed and ready to use. The seasoning packet I added to the dressing.

These little potatoes are yellow and are a waxy type of potatoes that are not as starchy as most potatoes are. I cut each potato in half and chopped them through my chopper. The skins on these potatoes are so tender there is no need to peel them.

This recipe is a hit with my family as my men still love potatoes. I have planted Yukon Gold potatoes for years already. Their buttery texture is so good!

Ingredients

Instructions

    NOTE***I buy the little potatoes in foil pans with a seasoning packet.

  1. i am thinking garden as it warms up , I was wondering what the name is of the waxy potatoes. I would love to plant some. I grow spaghetti squash, sweet potatoes and my family would love more potatoes, and i would love to feed them a healthy version if i could. Thanks for all your post , I look forward to them.
    Do you have any idea where I could get waxy seed potatoes?
