Sourdough Naan Bread with Garlic and Cilantro, THM E

Naan Breads are a soft pillowy flatbread native to India and parts of South and west Asia. Yogurt is added to the dough t give it its unique flavor and soft tender texture. These breads are cooked in a special oven called a tandoor. However, you can make them in a cast iron skillet, too. The garlic and cilantro gives these breads a wonderful flavor. The soft, chewy texture is hard to beat. I will use these naan breads to make Fish Gyros with a yogurt sauce. So delicious!!

Sourdough Cinnamon Roll THM xo

Do you want a tasty guilt-free cinnamon roll with your morning coffee? Here is a sugar-free sourdough one that I make for special occasions. These are a crossover–meaning they have both carbs and fats in them. I did add yeast to the dough to give the more traditional cinnamon roll taste. The sourdough starter ferments the dough making it “on plan” and the yeast helps with the rise and taste.

Sourdough for Dummies!

Welcome to the intriguing world of sourdough. There is something special about taking a bubbling starter, flour, water, and salt and creating a crusty light loaf of bread. Many crocks of sourdough starter traveled in covered wagon as settlers settled over the New America and Canada.

Sourdough starter can be used as yeast in any type of baked item. Its use is not limited to just breads. Anything you use flour in can be made with sourdough starter, including pie crust, noodles, etc. Fermenting the dough for 7 hours or longer breaks down the phytic acid in the grain. This makes it so much easier for our bodies to digest.
