Old Fashioned Sauerkraut–Lacto-fermented, THM FP

Fermented foods, such as sauerkraut have a long history in German culture. Sauerkraut is finely cut raw cabbage that is salted, packed into crocks, and allowed to ferment for a number of weeks. I learned to make sauerkraut in a large 10 gallon crock from my late mother-in-law. She would slice as many as 50 head of cabbage by hand on sauerkraut making day.

Stuffed Mushrooms and Zucchini, THM S, Keto, Sugar-free, Low-Carb!

Pennsylvania is often referred to the mushroom capital of the world. 63% of the United States white mushroom crop is grown in this state. What is better than stuffed mushrooms for an appetizer or even stuffed portabellas as a main entree? This tasty ground beef filling is chock full of hidden veggies and lots of flavor. I will often triple this recipe, stuff, and bake the mushrooms. They then can be frozen in a single layer on a cookie sheet. When totally frozen; vacuum pack in bags and return to the freezer. In need of a quick meal–defrost and heat.

Herb Roasted Vegetables THM S, Keto

Have you ever walked through your garden and came in with a basket of veggies and herbs? I love to make Herb Roasted Veggies to compliment a meal. Since we needed to plant later in the northern part of Pennsylvania where we now live my garden isn’t producing yet other than herbs. I served these Roasted Veggies with Blue-cheese Stuffed Hamburgers for our evening meal. My stoneware large bar pan is my favorite for roasting. I did add 2 sweet potatoes to the veggies for my husband and children. This meal is easy to make for a family and picky eaters can pick and choose which veggies they want to eat. You can use any mixture of veggies but to keep it in an S do not use any veggies with carbs such as sweet potatoes, carrots, regular potatoes.

The Perfect Cheesecake THM-S, Keto Friendly

Cheesecakes have always been a favorite dessert of mine to make for special occasion. They are one of the easiest dessert to make sugar-free and low-carb and they taste just like the sugar-laden ones do. When I take a cheesecake to carry-in dinners I always come home with an empty plate. Separating the eggs and whipping the egg whites stiff give a wonderful light texture. You can also bake this cheesecake in a 9 x 13 pan if your prefer is you do not have a springform pan. Sometimes I omit the sour cream topping and just serve it with whipped cream and fresh berries.

Strawberry Pie THM-S

Nothing says summer like a freshly picked, sun-kissed strawberry. As a young teen I spent many hours picking strawberries for produce stand. Strawberries are the first berries to ripen followed by raspberries a few week later. This strawberry pie is a makeover of an old family favorite. It pie never last long at our house and I am sure it won’t at yours either. My regular recipe asked for strawberry jello but I have substituted Strawberry Kool Aid and unflavored gelatin to be able to make it sugar-free.

Strawberry Cream THM-FP

Strawberries herald the spring/summer season as roadsides stands and markets display boxes of crimson fruit. They are the easiest fruit to grow in backyard gardens and produce very well. This dessert is refreshing on warm, summer days and best of all it is a Fuel Pull. Using frozen berries thickens the dessert almost immediately after blending in soften gelatin. I am enjoying more FP desserts to balance out those meals when I just need a bit more protein and something sweet.

Egg Salad THM FP

What do you do when you really want egg salad on a toasted piece of sourdough bread but you don’t want a crossover? Low-fat cottage cheese and mustard blended together, mixed with diced hard boiled egg whites added just the right touch to make a Fuel Pull Egg Salad that not only tasted wonderful but tricked the eyes in looking like it was made with whole eggs. It was delicious served on toasted Sourdough or sprouted bread with slices of tomatoes, onions, and lettuces leaves. Serving it on sourdough/sprouted bread made my lunch a E from the carbs in the bread but it also can be served on lettuce leaves for a FP. I, also love to use Refrigerated Pickled Jalapenos on my sandwich.
