Canned Barbecued Onions THM-FP

Barbecued onions add a delightful touch to hamburgers, hot dogs, and cheese steaks. My favorite onion to use is this recipe is Vidalia. They are so sweet and  tasty. This post does contain affiliate links with the products I love to use. I receive a small commission but your price does not change.

Barbecued Onions

  • 1-quart spaghetti sauce, sugar free
  • ¾ cup ketchup
  • ¾ cup brown sugar Sweet Mix
  • 1 teaspoon salt
  • ¾ cup apple cider vinegar
  • ¼ cup olive oil
  • 20 cups chopped Vidalia onions

Combine spaghetti sauce, ketchup, spices, oil, vinegar and Sweet Mix. Bring to a boil and add onions. Simmer 10 minutes, ladle into jars, add lids and rings. Place in boiling water bath canner and process 10 minutes. 10 pints.

*You can use 20 cups of these 3 veggies…mushrooms, onions and green peppers in place of all onions.

*Delicious on Cheese steaks, hot-dogs or hamburgers.

This is my favorite chopper when I am canning. The children can help use it since the knives are covered by the lid.

This recipe is not FDA approved but has been used for many years with great success. Pressure Canning is not necessary with this recipe because of the amount of vinegar in it.

Do you ever need more protein with a THM E or FP meal to keep you from getting hungry so soon? I, especially, need added protein with an oatmeal breakfast. Vanilla Cottage Cream

Combine ingredients in a bowl. With a hand blender blend until smooth and creamy. Refrigerate until ready to serve. Serve 3-4. This is a favorite to eat with oatmeal for an E breakfast.

*Full fat Cottage Cheese and Greek Yogurt can be used for an S option.

Servings 4

Ingredients

  • 1 cup fat-free cottage cheese
  • 1 cup fat-free Greek Yogurt
  • 1 teaspoon vanilla extract
  • 2-3 tablespoons THM Gentle Sweet
  • 1/4 teaspoon xanthan gum

Instructions

  1. Combine ingredients in a bowl. With a hand blender blend until smooth and creamy. Refrigerate until ready to serve. Serve 3-4. This is a favorite to eat with oatmeal for an E breakfast.  *Full fat Cottage Cheese and Greek Yogurt can be used for an S option.

Breaded Okra with Cajun Sauce

I love breaded okra and here is a recipe you can enjoy without feeling guilty. I use whole, frozen okra and they turn out great. Pair it with the Cajun Sauce and you have delightful side dish to served with grilled chicken or Jalapeno sausage. This is a THM S dish.Breaded Fried Okra

Breaded Okra

  • 1 pound whole frozen okra
  • 1 egg
  • 1 tablespoon Almond Milk
  • 2 tablespoons Masa Cornmeal
  • 1/4 cup THM Baking Blend
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • coconut oil for frying

Cajun Sauce

Thaw frozen okra slightly. Beat egg and almond milk together. In a separate container; mix cornmeal, baking blend, salt, and pepper together. Dip okra pods in egg wash and then into baking blend mixture. Heat 1 inch oil in a skillet until 350 degrees F.  Fry breaded okra, a few pieces at a time, until golden brown. Drain on paper towels. Season with additional salt if needed. Mix sauce ingredients together. Serve with fried okra. Serves 4.

*add the larger amount of seasoning for a spicier sauce.

  • 2 tablespoons prepared horseradish
  • 1 tablespoon sugar-free ketchup
  • 1/4-1/2 teaspoon cayenne pepper
  • 1/2-1 teaspoon Cajun Seasoning

Instructions
