Peach Salsa, THM E, DF, GF, SF

Ingredients

  • 5 medium peaches
  • 1 cup chopped red onion
  • 1 red pepper finely chopped
  • 1 jalapeno seeded and finely chopped, you can add some seeds for heat
  • 2 tablespoon chopped fresh cilantro
  • 1/2 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • juice of one lime

Instructions

  1. Peel the peaches and chop. Combine the peaches, onion, pepper, and jalapenos together. Add cilantro, cumin, salt, garlic powder, and lime juice. Mix gently. Cover and refrigerate at least one hour or longer to combine flavors. Stir with corn chips. Approximately 5 cups salsa or 10-12 servings.
