Sprouted Flour Biscuits

Ingredients

  • 2 cups sprouted pastry flour
  • 2 tablespoons butter cold and grated
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup and 1 tablespoon fat-free kefir

Instructions

  1. Mixing: In a mixer bowl combine the flour, butter, baking powder, and salt. Mix until crumbly. Add 3/4 cup kefir. Mix again. Add the additional tablespoon of kefir if needed. The dough should clump together around the mixer beater.

  2. Kneading: Place the dough on a oat flour dusted board. *Press the dough into a square that is 3/4 inch thick. Fold the dough in half. Repeat from the * four times. Press the dough to a thickness of 3/4 inch. Cut biscuits. Knead the scraps together and cut remaining dough. Place cut biscuits on a baking sheet covered with parchment paper
  3. Baking: Preheat oven to 400 degrees. Bake biscits for 11-15 minutes. Serve warm with butter.
  4. Red Lobster Biscuits: add 1/2 cup shredded cheddar cheese, 1/2 teaspoon garlic powder, and 3/4 teaspoon parsley along with the flour. Follow remaining instructions. Remve biscuits from the oven and brushed with melted butter that has garlic added to it.
