Savory Oatmeal Bowl, THM E, GF, SF

Ingredients

  • 1 1/2 cups collagen bone broth divided, I used beef
  • 1/2 cup oatmeal
  • pinch of mineral salt
  • 2 egg whites
  • 1 whole egg
  • 1/2 cup chopped broccoli
  • 1/2 cup sliced mushrooms
  • 4 cherry tomatoes
  • hot sauce

Instructions

  1. Cooking the oatmeal: In a small saucepan bring 1 cup of bone broth to a boil. Add oatmeal and salt. Simmer 5 minutes. Stir in egg whites. Simmer 2 minutes.
  2. Poaching veggies and egg: In a small pan simmer the veggies in the remaining broth until tender. Add egg. Cover and simmer until egg is cooked to your prefered way.
  3. Serving: Placed cooked oatmeal in a bowl. Spoon veggie and egg over the oatmeal. Serve with hot sauce.
