Turkey Ham and Veggie Quiche THM FP

  • 2 cups cut up veggies--I use mushrooms and zucchini
  • 1 ounce fat-free turkey breast
  • 3 egg whites
  • 1 teaspoon Nutritional Yeast
  • 2 tablespoons low-fat cottage cheese
  • Salt and Pepper to taste


  1. Place vegetables in a microwaveable dish. Microwave for 2 minutes. Arrange turkey breast over vegetables. Set aside. With a hand blender, blend egg whites, Nutritional Yeast, and cottage cheese together. Pour over vegetables. Sprinkle lightly with salt and pepper. Microwave for 2-3 minutes. 1 serving.
  2. Omit cottage cheese for a dairy free quiche.
