  • 1 small/medium spaghetti squash
  • 2 tablespoons butter or olive oil for dairy free
  • 6 eggs
  • salt pepper, and Nutritional yeast
  • hot sauce optional


  1. Wash the spaghetti squash and cut it into 3/4 inch rings. Clean the seeds/membranes out of each ring. Lightly spray your cast iron frying pan with butter/olive oil. Heat over medium heat. Lay the spaghetti squash rings in the pan. Fry for 3-4 minutes or until lightly browned. Turn each ring and fry for an additional 3 minutes. Carefully break an egg into each ring. Season with salt, pepper, and nutritional yeast. Reduce the heat to low and cover the frying pan with a lid. When the egg whites are set or the eggs are fried to your liking, remove the rings to a serving platter. 3 servings.
  2. You can multiply this recipe as many times as you need to serve your family.
