Sprouted Hot Cross Buns, THM E, Sugar-free

Ingredients

Dough:

  • 3/4 cup water
  • 2 tablespoons butter melted
  • 2 egg whites
  • 1 tablespoon whey protein
  • 3 donks THM Stevia
  • 1/4 teaspoon salt
  • 2 1/2 cups sprouted wheat flour
  • 1 tablespoon instant dry yeast
  • 3/4 cup raisins or currants
  • 1 teaspoon orange zest if desired

Egg Wash:

  • 1 egg, beaten
  • 2 tablespoons water

Frosting:

  • 2 tablespoons Greek yogurt
  • 1 teaspoon Gentle Sweet
  • 1 donk of xanthan gum

Instructions

  1. Egg Wash: Beat egg with water. Brush the bun. Cut top of buns into a cross or if you would like you can just frost the tops into the shape of a cross. Bake buns for 20-21 minutes. Remove from oven and allow to cool. Frosting: With a hand blender blend the frosting ingredients together. Pipe frosting in a cross over the top of the buns. 12 buns.
