Heat 1/2 tablespoon oil in a skillet over medium heat. Beat egg whites and turmeric together. Pour into hot skillet. Fry one side, flip and fry on other side. Cut into strips and set aside. Add remaining oil to skillet. Sauté onions and garlic until tender. Add rice, peas, carrots, and chicken to skillet. Stir fry until thoroughly heated. Add soy sauce, ginger, and black pepper. Add fried egg whites. Serves 4.
