Chocolate Mint Chip Cookies THM S, Keto, SF, GF

  • 1/2 cup butter softened
  • 3 eggs room temperature
  • 1/2 cup Brown Sugar Sweetener or THM Gentle Sweet
  • 1 teaspoon vanilla
  • 1/3 cup cocoa powder
  • 2/3 cup THM Baking Blend*
  • 2 tablespoons Almond flour
  • 1/2 teaspoon xanthan gum
  • 2 teaspoons baking powder
  • pinch of salt


  1. Preheat oven to 350 degrees F. In a mixer bowl, combine butter, eggs, sweetener, and vanilla. Mix well. Add cocoa powder, Baking Blend Almond flour, xanthan gum, baking powder, and salt. Mix well. Stir in mint chocolate chips. Scoop on a parchment lined cookie sheet. Bake for 7-8 minutes Cookie will appear under-baked but will set up as they cool. 24 cookies

    *you can replace the THM Baking Blend with almond flour.
