Bumbleberry Cobbler THM-E

Ingredients

  • Fruit:
  • 3/4 cup diced apples
  • 1/3 cup blueberries
  • 1/4 cup rhubarb
  • 2 strawberries diced
  • 1 tablespoon THM Gentle Sweet
  • Cobbler batter:
  • 1 egg white
  • 2 tablespoons Nonfat Greek Yogurt
  • 3 tablespoons water
  • 1/8 teaspoon THM Butter Extract
  • 2 tablespoon oat flour
  • 1 teaspoon THM Gentle Sweet
  • 2 tablespoons THM Baking Blend
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat oven to 350 degrees. Combine fruit with Gentle Sweet . Pour fruit into a 6 inch baking dish. Blend together egg white, yogurt, water, and butter extract until smooth. Set aside. Combine oat flour, Gentle Sweet, Baking Blend , and baking powder. Stir wet ingredients into dry just until combined. Spoon over fruit mixture. Bake for 20-25 minutes. Serve warm with nonfat Greek Yogurt. Serves 2.
