Cobb Salad THMS, Sugar-free, Low-carb, Keto

Our family loves salads and this one is the tops! This Cobb Salad also gives a wonderful presentation at potlucks and picnics. Some of our children are not crazy of bleu cheese so I keep it to one side for those of us who do!

I prefer a mixture of lettuce types. It gives a much better flavor and crunch when you mix them. Some of our family does not care for Romaine lettuce alone but when I mix it with Iceberg they will eat it.

My husband cures and smokes our own bacon and that adds a special touch. You just can’t beat home cured bacon smoked with hickory chips!

Cobb Salad THMS, Sugar-free, Low-carb, Keto

  • 6 cups chopped Romaine Lettuce
  • 6 cups chopped Iceberg lettuce
  • 12 slices bacon, fried and crumbled
  • 3 avocados
  • 1 cup diced tomato
  • 3 hard-cooked eggs, sliced
  • 3 chicken breast, cooked and sliced
  • 6 green onions, sliced
  • 1 cup crumbled bleu cheese
  • 3 tablespoons fresh chives
  • Dressing:
  • 1/3 cup red wine vinegar
  • 1 teaspoons salt
  • 2 teaspoon lemon juice
  • 1 small garlic clove, minced
  • 3/4 teaspoon coarsely ground pepper
  • 2 tablespoons Gentle Sweet
  • 1/2 teaspoon ground mustard
  • 1 cup olive oil
  • chives

Toss lettuce together. Place on a serving platter. Layer bacon, avocados, tomatoes, eggs, chicken, and cheese in rows on lettuce. Blend dressing ingredients until smooth. Drizzle over salad and sprinkle with chives. Serves 6.
